My lunch was SO GOOD! Wish I had taken a photo now...it was just so delicious and simple :)
All I did was took 2 portabello mushrooms, the big flat ones. Drizzled with a little olive oil and put in the oven to cook them a bit. Then took them out, put on some tomato puree, then some tuna and finally covered them with cheddar cheese. Popped them in the oven for 5 minutes until the cheese had melted then ate them! Reminds me a bit of a pizza/panini, without the carbs!
